Dominican Sofrito

Sofrito is a fragrant blend of aromatics such as garlic, onion, peppers, herbs, etc. It’s a staple in Latin & Caribbean cooking and is used to infuse flavor into a variety of savory dishes such as rice, beans, meats & veggies. There are multiple variations to sofrito, and even within the same culture, every household has their own unique method of making it. This version is the standard Dominican style sofrito, taught to me by my mother in law, who comes from La Vega, Dominican Republic. This can keep in your fridge for up to 2 weeks or 6 months in the freezer.

Ingredients

1 bell pepper (any color), quartered
1 medium onion, quartered
1 stick celery
entire head of garlic, peeled
5-6 stalks cilantro
1 tsp oregano
1/4 cup evoo
2 tsp salt

Method

  1. Put all ingredients in a. blender and purée until smooth

  2. Store in refrigerator up to 1 month, or up to 6 months in the freezer.
