Easy Red Pepper Marinara

Ingredients

2 medium yellow onions, small diced
1-2 red bell peppers, small diced
1 can tomato paste
1 tbsp. Calabrian chilis in oil
2 28oz cans crushed tomatoes
2 tbsp. Italian seasoning
approx. 1/4 cup high quality EVOO
salt + pepper, to taste

Method

  1. Heat a large pot over medium heat, add EVOO until shimmering. Add onions + peppers and a generous pinch of salt. Cook over medium-low heat for 15 min, stirring often so they don’t brown.

  2. Add in tomato paste and stir to combine. Cook 1-2 min until fragrant and color deepens. Stir in Calabrian chilis. Add both can of crushed tomatoes and about 1 can worth of water (start with less and check consistency).

  3. Season with salt, pepper, and Italian seasoning to taste.

  4. Bring to a boil, reduce to a simmer, cover and cook for 45 minutes. Bon Appetit!
