Pink Dipping Sauce
When I was introduced to Venezuelan cachapas and Dominican street food when I came to New York, I instantly became obsessed with the sauce. I had no idea it was just mayo ketchup (and a little lime juice). Once I learned how to make it, I said to myself, “that’s it?” …it’s really that simple. While it may seem almost too simple to dedicate a whole recipe page, I don’t think anything is. Sometimes it’s the simplest things that stump us because we naturally overcomplicate things. And if it helps one person to go from loving this magical pink sauce to knowing how to make it for themselves, that’s all I can ask for!
To make this sauce in the most “Kat” way possibe, use organic ketchup, which typically does not contain any high fructose corn syrup. ALWAYS read the label just to make sure! And if you haven’t already, check out how to make your own mayo here.

Equal parts ketchup & mayo (read notes above)
Fresh lime juice
Method
MIx ingredients together in a bowl. Enjoy on a chimi burger, arepa, or my beef empanadas.
